food sensitivity: causes of food sensitivites

"At a recent session of doctors studying internal disorders a doctor asked, "What causes Food Allergies?" Obviously, food sensitvities are caused by the body's immunological response to food. The real question should have been, "How does a patient acquire food allergies?" The tendency to be sensitive to foods is either familial (genetic tendency) or, by the constant and repeated exposure of the same foods. Both parents pass the tendency to be sensitive to certain foods. Normally, a small child will reject these foods in their diets. If at an early age we are forced to eat certain foods that we do not like or the foods disagree with us, we tend to become sensitive to these foods. Unfortunately, over time our systems begin to tolerate this repeated exposure to a food. Gradually, we begin to show symptoms to our food sensitivities."
