No mention of cognac. One of my fav ingredients. I adore alcohol infused foods. From main dishes to sides to desserts. I usually add dry sherry to my seafood dishes. Cognac to anything apple. White wine or champange to chicken. Red wine to beef. And I have several dishes that require whiskey, vodka, tequila, brandy, or bourbon, etc. Funny, we don't care for the taste of alcohol in a glass yet love it in foods.
