Hi everyone,

I don't know if you ever face this delema but, cooking dinner and thinking what to make thats fast, easy and kinda in the healthy range is really hard for me to do. I was wondering if anyone had any recipes they would like to share. (I don't know if anyone is even intested in this or not) but for me cooking is a heavy burden and I'm kinda out of ideas.

Hi Dawn,

i'm a former sous chef (amongst other careers) and eager to share tips, secrets, & recipes. my specialties are sezchuan and southwest, but i can cook pretty much everything except pastries. so,tell me what cuisines you like and we'll start from there Smile

I'm not a chef except in my own home but since I am so allergic to things I have come up with gluten free, low fat low salt recipes that are rich in flavor and full of fresh (or frozen) goodness. I'm sure others will be glad to add recipes. This is what the topic was set up for so let's get it going (~: Give me a day to gather some recipes.

I'm looking forward to this! I'm not a great cook by all means- but one of my favorate and pretty easy meals is tacos. If you really want to make this easy I use corn totillas and I cook them in margerine in an iron skillet pan. Also, I shread my cheese either that day or the night before, cut up my tomatoes shred the lettuce and either use hamburger meat or if I'm really feeling crappy Sun Vista Pinto Beans with Pico Pica Hot sause. The whole family likes this and its pretty easy. Its also a very inexpensive meal to make!

Carne Asada/Fajitas

1# Skirt Steak

Marinade

1 1/2 cup water

1/2 TBS Lime Juice

1/2 TBS W-sauce

1/2 TBS Vinegar

2 Cloves Garlic chopped

1 tsp Dry Oregano

1/2 tsp Cumin

1/2 tsp Coarse Salt

1/2 Cracked Pepper

marinade steak 1-3 hrs. grill over medium flame 4-min per side (medium done). serve w/dirty rice & grilled asparagus

for fajitas, cut steak on bias and combine w/grilled onions/peppers/tomatios

dessert: fried bananas w/sugar cane-caramel glaze

Thank you I'm gonna try it!! how do you make fried bananas???? lol

I found this one on one of the cooking sites on here and was good and really easy

1 can cream of chicken soup

1 can cream of celery

1 can French Onion soup

1/2 can chicken broth

1 cup white rice

Pour everything in a glass baking pan

Add 4 chicken Breasts

Spoon soup on the top

Cover with foil and bake at 325 for 2 1/2 hrs uncover and bake 15 mins and add some pepper to taste.

It was really tender and no standing for long!!!!

If any of you like cheese potato soup this is a really easy way to make it.

4 cans of Cambells Chedder Cheese Soup (or the Jalapeno flavor)

6 Potatoes Cut to bite size, boil until tender (over done will make it softer, but that's good too if you like it that way)

Drain Potatoes, leave in strainer while you do the next step.

Open cans of soup, add to pot (I use the same pot for the entire preparation)

Use one can of milk per each can of soup, add 1-2 cans of water. (or more milk if you choose)

Once creamy, add Potatoes back to the pot

Season to taste (I use sea salt, pepper, garlic powder/garlic salt, onion powder/onion salt, dehydrated onions and a dash of parsley)

You can substitute powder cheese sauce mix instead of the cans

You can also mix the cans of soup, milk and water first and cook the potatoes in it. This is best if you want to cook in fresh onions, garlic or other veggies)

This is really easy right down to just using one pot.

Feeds at least 4

We make our soup cheesy thick, the more milk or water the thinner it will be

I love adding a dash of hot sauce to my own bowl especially when cold out. Yum!

FYI

Allrecipes.com is a good website for beginners and refreshers. the recipes are submitted by everyday households and indexed for quick searches. lots of 'downhome' dishes and usually uncomplicated. i check it out when i want to try a twist on a kitchen staple...dave

Good source dave, but it is still appropriate for folks to put recipes here. So please continue. Sometimes I don't want to go to another source when what I want is an easy recipe.

Thanks I'm gonna try the cheese potato soup too! I'm just in a very big rut and my husband was doing alot of the cooking when he came home from work and it was making me feel bad. I just want to contribute more- and easy is great! I have a big family and while my appetite isn't so great all these ideas are inspiring me to cook more! So thank you- and I realize its hard to post things when your not feeling good so whenever you feel like it- I'm ready!
