We came home for a break- did all the prep work this morning. Pork chops are marinating now. It went so well! Honey is a champ in the kitchen- followed all my instructions perfectly. He worked his heinie off! We're heading back over shortly- we're going to prep for the rest of the week while we cook the marmellata (takes a long time!!) and then cook supper for tonight. I should have lots of good stuff ready ahead of time for the week! He's such an awesome helper- I wish I could afford to hire him!!!

That's so great that Honey works with you so well!

When you have some spare time (ha!), can you elaborate on what some of those dishes are? They sound yummy!

The heck with YOU hiring Honey! I WANT TO HIRE HONEY! I can't get my hubby in the kitchen to save my life...oh wait, I have to give him the credit he is due. He did, for the first time last night, offer to make me a sandwich. I must have really looked like crap for him to make that offer. My hubby is totally intimidated by my cooking abilities and any time I ask him to take over a meal, it's more like which takeout menu do you want to pick from? W00t

LOL- we'll come out there and cook for ya!! LOL

The antipasti were just some veggies for appetizers- marinated artichoke hearts, olives, giardinaira (that's not spelled right), and such. The affettati misti is a meat and cheese platter- more appetizers. The crostini are just pieces of a long thin Italian loaf that are herbed and olive oiled and baked. Those will be served with a hot artichoke dip. The ciabatta stuffing is just like your typical stuffing only with ciabatta bread, chestnuts and pancetta, an Italian meat. The chops just have an herb blend with some olive oil then will be grilled and topped with the marmellata (marmalade), which is onions cooked with some orange marmalade for a few hours. They have some seasonings, but just the slow cooking caramelizes them. The peas are just cooked with some shallots and prosciutto, Italian ham. For dessert, we just lined muffin tins with plastic, put in round pieces of pound cake which were topped with a bit of coffee. Then that was topped with coffee ice cream and frozen. When they are ready to serve, we'll top them with a spoon of hot fudge- chocolate ice cream tiramisu!

That explained it well enough that I am now craving some Italian food!

Cornbread...where did you learn to cook like that? Can I get in line behind Jeerie?

LOL Well, I'm beat. I didn't sleep at all last night thanks to the pain and sweats. On top of that, Honey snored all night! The dinner was awesome, everyone loved it, but there were only 9 people total! I cooked for 24!

I just found the recipes and made them. It was really easy- all the dishes were. I have been cooking since I was tall enough to reach the counter by standing on a chair ( age 3 maybe?) and my first job at age 14 was personal cook for 2 families. Just been doing it a long time. Anyone could make these dishes though. It was a lot of work, but not once all the prep stuff was done.

Sorry, no doggy bags! There are lots of leftovers at the frat house though!
