David wanted to cook tonight so we get a little crazy. We made meatloaf and spice cake. But we made the meatloaf into cupcakes with whipped potatoes for frosting and then we made the spice cake look like meatloaf with red frosting as glaze.

The meatloaves were prety intersting. They turned out perfect. We browned and drained some bacon, chopped it up and mixed it in along with a couple eggs and a couple slices of bread torn up. We used the regular suspects of spices and used those aluminum foil cupcake cups. It bakes up great and serving was fun.

What a cool idea... LOVE the idea of mashed potatoes for icing!! One of my most memorable dishes was at a pot luck. We had all put our dishes on the table and were digging in. After dinner we cleaned up and were setting up dessert when my girlfriend grabbed a spoon and dug into the potted plant being used as the centre piece!!! To my amazement it was dessert. She had done up chocolate pudding with gummy worms and crumbled oreo cookie biscuits on top to make it look like dirt, served it in a flower pot then stuck a plastic plant in the centre. Totally awesome!!

Sounds sooo good LM! Wow, I just realized I didn't eat dinner LOL....

Tabi I've seen cake done the same way, only served in brand new litterbox with a scooper to serve it, and tootsie rolls for decoration Smile

Next time I go to a winter potluck I think I'll do the meatloaf cupcakes Smile

Lockman,

What great idea's you and you son came up with. I love to cook and so does my 13 year old stepson. I love the creativity and thinking out of the box...hmmm I think I will try to come up with something. Something I have been wanting to try is the yellow ice cream cones & you pour cake batter in them and bake and then frost... such a cute idea too. Have you tried that yet?

Bobbi ,

I have seen that cat litter cake on the net and I almost threw-up. PLEASE DO NOT EVER TAKE THAT TO A POT LUCK!!!! HAHAHAHAHAHA Wink

oh I make a great cake. It's called the dirt cake and it's made in a flower pot or a sand bucket and you put a fake flower in it and a plastic shovel to serve (it's not a baked cake) It's yummy the dirt is ground up oreos!!!!

Lockman,

I love mashed potatoes, I am a carb lover (not good for a diabetic) and I love meatloaf too. My son is the bigges practical joker and I can never find anything good enough to come up with to beat him at his game. I think I've got a winner here with your recipe. Thanks for sharing, I love it!!

I have seen the dirt cakes and kitty litter dessert too. The dirt cake I can handle, but not that kitty litter thing. Uuuughhhhh!! Lots of great ideas though. We have some pretty creative people here.

Thanks for the ideas!!

Christine
