No matter what ails us, certain foods can cause us to feel worse or to feel better, it's all in the knowing what to and not to eat. I love to cook, and I am always scanning my recipe books, and I have a book on Fibromyalgia that teaches me about certain foods. If anyone would like, we could start a thread and ppl can offer recipe ideas and so will I. wanna huh huh?

I could use some crock pot recipes. I am really having a difficult time cooking.

I can't bend down anymore to get in my lower cupboards and find it almost impossible to lift a heavy pan. I dropped a pot of pasta and burning hot water the other day while try to drain it. It is so frustrating. I'm also having a hard time remembering to turn off the stove. I think I've become dangerous in the kitchen.

Something I can just throw together in the crock pot seems like it would be easiest for me, and safe.

Anyone have a good crock pot recipe?

If you get things stewy or soupy, use less water. Here's a good one- put a whole chicken in the pot, dump on a jar of orange marmalade and 1/2 c. teriyaki sauce from a jar. Add about 1/4 c. water, put lid on and cook low all day. It'll fall off the bone.

Here's another good one- easy too. Take as big a pork roast as will fit in your crock. Cover with water and cook on low overnight. Don't even peek. It'll stink like crazy in the morning, but you'll have a great pork stock- easy freezy in ice cube trays then into ziplocs for adding flavor to gravies, etc. a little or a lot at a time.

Anyway, in the late morning, get the liquid out and shred that pork roast. I usually leave it sit for a few minutes to cool. Put all the shredded pork back in the crock, add a can of manwich sauce and a bottle of your favorite bbq sauce (use less if you like it drier) and stir. Back on low with an occasional stir till suppertime. Serve on buttered and toasted buns or Texas toast with slaw on the side or the sandwich.

Can do the above with beef too. For chicken, I would suggest boiling it on the stove in the morning, shredding and then back in the crock.

Bean stuff

1/2 lb. ground beef (cooked/drained)

1/2 lb. bacon cut up(half cooked - not crispy)

1 big roughly chopped onion

1 c. ketchup

1/2 c. honey

1/2 c. brown sugar

1 c. crushed pineapple with juice

2 tbsp. vinegar (I like apple cider with this recipe)

1 tsp. chopped garlic

1 can garbanzo beans drained

1 can red kidney beans drained

1 can black beans drained

2 cans pork & beans or a big family size

I double this for my big crock and add in Northern beans and Lima beans. I also add another big can of pork & beans, more bacon, more beef...cook on low all day & serve with warm bread- yummy!!!

This is really good with fresh corn tortillas:

1 can Black Beans, rinsed and drained

1 can Mexi-corn, drained

1 jar salsa, divided

1 lb chicken tenderloins

Rotel Tomatoes

Put black beans, Mexi-corn and 1/2 jar of the salsa on the bottom of the crock pot. Add tomatoes. Top with the chicken and pour the rest of the salsa over it. Cook on low all day, or high for 3-4 hours.

I add a block of cream cheese cut in cubes right at the end and stir till it melts.

Ok, that's all I have in me for now...lol...if you have more specifics, let me know and I'll see what I can come up with!

Oh, and you can wrap potatoes in foil, put them in the crock and cook all day for easy baked potatoes!

Rotel is a brand of Mexican stewed tomatoes. If you can't find them in your store, use diced or stewed tomatoes with onions and chilis in it. Hunts makes a really good one.

I can almost smell the steam from the crock pot, mmmmmm.

It's not a hearty meal, but I like to make salad with broiled chicken.

Basically broiled chicken, spinach (spinach so much helps me, esp w/my limited diet not that I'm sensitive to some foods. Mix in some other greens, green peppers, cukes, carrots, thawed early peas and little pieces of mandarin oranges. If you can handle it, it is SO incredible with home made french fries on top. Yeah! Top with Raspberry Vinagarette dressing or your favorite.

Speaking of vinegar, anyone know/heard of effect of the body's alkalinity on fibro?

I LOVE tortilla soup, too. Of course I have to watch it with the cheese and sour cream, but mmmmm. I especially like dishes heavy in tomatoes. Tomatoes and carrots both seem to be kind to my fibro.
