Cathy,

Finally got to the grocery store last night & bought the tortellini, stewed tomatoes, etc...

My husband already had something planned for tonight, so I'm going to give that receipe a whirl Thursday or one day next week. I'll let you know what happens.

I actually love to cook but when I'm feeling really bad I go for quick and easy meals. We eat a lot of pasta. I cook chicken breast or chicken tenderloins and serve pasta, store bought sauce, chicken and top it with freshly grated parm cheese. I use really good quality sauce because it's so easy and sooo good.

a super quick meal is the bertollis meals in a bag. You'll find it in the freezer section. You cut open the bag, pour into a skillet, put the top on and leave for 8-10 minutes. they are really good too. Suzee, you can cook this, trust me.

Home made pizza's are easy and I can get the kids to help with them. I use store bought crust, sauce, pre-shredded cheese, pepperoni, what ever else you want.

This isn't very healthly but we bought one of those big fryers for christmas. we go to Sam's club and buy a big box of the pre-breaded chicken strips and a big bag of fries. It's cheaper and better for you than sonic or McDonalds.

If you are a burger lover the patties already made out are so easy, you just throw it into a skillet and flip when it's time to.

The biggest thing that helped me was to change my idea of what dinner had to be. I used to make the "big meal" but now I just do that once or twice a week. usually weekends. we eat a lot of pasta in different ways, tacos, salads with some type of meat.

I bought a crock pot thinking it would make life easier but I rarely use the thing.

We use the crockpot a lot. I'll buy a packet of seasoning for slow-cookers. Then put it in with a roast, potatoes (not peeled, obviously since I can't do that), carrotts, and onions.

I LOVE pasta! We actually had this last night: I put 3 big frozen chicken breasts in the crockpot yesterday morning and let them cook all day. Then my daughter fixed some bow-tie noodles. Once those are cooked, we cut up the chicken a little. Then we just throw the noodles, some good parmesan/mozerella sauce or alfredo sauce in with the chicken, and once it's hot we eat it! So Yummy!

Oh! I wanted to add. Another thing we really like is our George Foreman! We use it for all kinds of meat. Whether it's hamburgers, chicken breasts, pork chops, pizza burgers, etc. It's a good item too.

Hey ya'll! I thought I would include one of our favorite breakfasts on this thread! Enjoy!

1 Loaf French Bread

3 Eggs

1 1/2 C. Milk

Your favorite Jelly/Jam.

1 pkg. Cream Cheese

Mix the eggs and milk together in a bowl. Set this mixture aside.

Cut the French Bread into sections that are about 2 inches wide, then cut them again to open each section up. Place a generous helping of Cream Cheese and Jelly/Jam on the inside of the Bread. When finished, it should look like an over sized jelly sandwich.

Preheat a (non-stick) skillet. Dip the French Bread into the milk/egg mixture so that you cover both sides of the bread with it. Place the Bread into the pan and cook until the egg mixture turns brown in color, the cream cheese/jelly combo will melt.

Serve on a plate with your favorite syrup. For an added touch, you could sprinkle with powdered sugar too.

Betty Crocker meal in a bag are really good also. Just put the contents in Crockpot with alittle water and cook. It's all in one pot easy clen up if you buy the bags for the Crockpot from Reynold's.

Here is one of my grandmas recipes that my whole family really enjoys.

1 beef round steak, I usually get the one with the bone.

! package dry onion soup mix

2 cans cream off mushroom soup

Put the meat in a cake pan, smear the dry soup all over the top then pour over the cream soup. cover with tin foil and bake in slow oven 275-300 for at least 1 1/2 hours, the longer the more it will melt in your mouth. I make rice to go with this.

hi everyone it is so good to see that the easy meal thing is working i am so happy for all who helped make my life of cooking alot easier keep em coming i am making that breaskfast thing tomorrow and the susie beef roundsteak tonight cant wait hope my brain fog will let me get it done right wish me luck it so easy if i mess this up i am gonna scream

Here is another really easy one.

Pork chops (however many you need for your family)

Chicken Rice soup

Put pork chops in cake pan pour soup over, you want enough Liquid to cover the pork chops and make sure all the rice is covered. Cover the pan and put in oven at 350 for 1 to 1 1/2 hours. Pork chops should be almost falling apart.
