Cathy...this thread is an AWESOME idea and I wish I could add to it. But, I can't cook!! Even when my BODY allows me to...my mind won't work or vice versa...so the only post that I can add to this is:

My 5 Ingredients:

Taco Bell, McDonalds, Wendy's, Domino's and Subway...(eat fresh)!

Ground beef, refried beans, taco seasoning. Stir together, use mixture in tacos or on taco shells with some cheese, tomatoes, lettuce. Fast, easy and really good. Tastes great the next day too.

Thanks for this post, Cathy, I am with Suzee on this topic! I LOVE Subway because it's fast and healthy too but it costs a small fortune to feed myself and two boys with the way they eat. My oldest son has recently started to complain that all we have is fast food take-out, especially pizza which I can have delivered, or heat and eat frozen foods from the grocery store. So I am trying to collect some easy recipes that don't involve major clean up and lots of pots and pans or standing and chopping up ingredients for hours.

I just found this one in a magazine and I am going to try it. Looks fairly easy.

Citrus Chicken and Rice

4 skinless, boneless chicken breasts

1 3/4 cups chicken broth

1/2 cup orange juice

1/2 cup chopped onion

1 cup uncooked regular long-grain white rice

sauteed orange slices

1. cook chicken in medium nonstick skillet over medium-high heat 10 min. or until browned. Set chicken aside.

2. Add the broth, orange juice, onion and rice. Heat to a boil. Cover and cook over low heat 10 min.

3. Return chicken to skillet. Cover and cook 10 min. or until the chicken and rice are cooked.

you can also saute orange slices in a hot nonstick skillet until lightly browned. Garnish chicken with slices.
