jayna01"My name is Jayna and I wanted to take this opportunity to say how much MDJunction has meant to me. I always felt so alone before I joined in April of 2012. I felt like there wasn't anyone that really cared about me and what I was going through. I felt like there was no one that would truly listen to me in what I was feeling. Nobody was there for me. That is before I found MDJ!

I have found and met such good people on these forums. I never ever knew there were such compassionate people before MDJ. It's also nice to know that I can come here anytime and get support for what I am feeling. I feel like I have met some wonderful life long friends. It is also an outlet for me to try and help other people that are hurting. It gives me a good feeling inside and gives me self confidence in helping other people.

hey there all Smile happy friday!.. I was up and out of the house by 830 am to do my body pump class... boy did i hurt after lol.. still hurt from last night ab class and body attack... today i even upped my weights for body pump lol.. sighs.. love the torture i guess lol... had lunch with dad and some DD coffee.. he is actuay having a good day so far.. i havent been home in the last couple of hours i am sitting at Deas house catching up on computer stuff and doing laundry....i am sure he is at his house doing soething foolish because he feels better lol (for a day or a few hours)...tomorrow is suppose to be my day off from the gym.. we will see how long that last when dad realizes that.. 2 weekends ago i ended up doing 6 mile walk on the tampa trail... because he made the *arent you going to the gym today?* and when i said no you could see the face of oh god she is gonna be here all day with me sighs.... so i got up and went for the walk and i come back and i get Where did you go? LOL I cant win... Smile I made tacos for him and dea last night so they can mow down on something when they are ready to eat...its too hot to really cook anything so been trying to come up with different easy skillet foods i can make.. with beef .... any ideas would be welcomed lol... I have come up with tacos.. franks and beans...grilled cheeses... and then i am at a loss.. lol i eat completely different and for get how to make crappy foods lol (high calorie dinners)

so that my plight.... recipes would be great beef is his choice of meat(ground beef hamburger patties beef franks LOLyou get the idea LOL)

TGIF, I had a webinar all day/all week for work. It was torture. I have recently started going back to my gym and its been great for my body and my moods. I think this beach pic looks so relaxing. I need a vacation.

Pork Chops with spicy sauce

4 lean pork chops, butterfly chops, or thick slices of pork loin

Salt and pepper to taste

Flour

Dredge the chops thru the flour, salt and pepper and place in a skillet (cast iron if you have it) and fry with a little oil just til they brown a bit.

Sauce:

1 cup ketchup

1 cup chicken or beef stock (don't use bullion, it's too salty, if you don't have stock, you can use a soup base and water OR you can use 1 cup apple juice)

1/4 cup soy or light soy sauce

2-4 good dashes of a tabasco type hot sauce

1 tsp mustard (spicy brown if you have it, plain if you don't)

1/2 tsp garlic powder or minced fresh garlic

Optional:

1/4 cup heinz 57 steak sauce or A1 steak sauce

Mix all ingredients and pour over pork chops, slice a yellow onion thinly and lay slices on top of the chops. You can bake this in the oven, uncovered, for an hour, or you can cook it on low on top of the stove for about half an hour, turning the chops every once in a while to cook evenly. Or you can place everything in a crock pot after browning the chops (don't cook thoroughly, just sear to brown the outside) and cook on High for about 3 hours, or Low for 6 hours. IF you crock pot them, cut back on the added stock or juice, as a crock pot won't release as much steam and thicken the sauce. Cook until the chops are done thoroughly and sauce has thickened. If you got the sauce too thin, you can thicken with a roux or with cornstarch dissolved in a little warm water to serve as a sort of home-made spicy/sweet sauce (apple juice and heinz 57 if you want it spicier, leave off the steak sauce and use stock if you want it a bit milder).

They are excellent and one of my husband's favorite dishes.

For variation, you can add some sliced apples on top of the onions, and /or some cranberries in the sauce.

BE AWARE: that soy sauce is salty, so you don't want to add much if any to the flour to brown the chops, or it'll turn out too salty... unless you like food that way! You can leave off the soy altogether if you're on a sodium restricted diet.

HA HA!!! you are looking at that wave like oh no here it comes. What about Nachos, spaghetti,hamburger steaks w/gravy & rice and some type of veggie, hamburger, Hamburger wrap (not much different but put together a little different). You did not mention chicken or fish. Grill the franks. Put frank in bun wrap in foil slide in oven and let bake, then if he likes cheese lay a piece right before taking out of oven. Can he eat corn, lay it on the grill. Dice up a few potatoes carrots and any other type of veggie. Lay on foil, pour a little italian virgin oil salad dressing close foil lay on grill. Does he like tuna salad, macaroni salad, chicken salad. I no we cook the same thing day after day. Just have to find different ways to cook. Make some chili cut up the pour chili over franks. That is what we call chopped winners here / a little slaw.

Oh wait!! You said beef! *thinks* Ok, try this one:

Stuffed Hamburgers

For each burger you're going to need about half a pound of burger, a thick slice of velveeta, salt, pepper and garlic powder, and hamburger fixings.

Using 2 plates, pat and press out two thin hamburger patties, using a quarter to a third a pound of meat. On one, place salt and pepper, and a slice of velveeta cheese. You want to trim the cheese so that there's meat on all sides. Take the 2nd patty and flip it onto the top of the first, and pick up, pinching the edges together. Place in a skillet with a touch more salt, pepper and the garlic powder. You don't want to fry too slowly, because the burger will start shrinking, it'll open cracks and all that melted cheese gooey goodness will melt into the grease and the pan. Fry fairly quickly, just make sure it's enough to get them done to your taste and the cheese is melted. Make into the thickest burger you've ever had using all the burger toppings you want. This thing is going to be so huge, you'll probably have to cut it in half to be able to eat it and handle it! They are definately not heart healthy but they are SO good and gooey. You can use a different cheese if you like but there's something about the velveeta, the meat juices, and the pepper that combine to make a heavenly treat!

Burgers with cheese and red sauce:

Pat out several small burger patties. Put them to fry as you would any burger, using only salt, pepper and garlic powder (can also use celery and onion powder if you'd like). When close to done, pour off the grease and lay a slice of cheese (I use velveeta because it melts so smoothly, but you could use just about any cheese) on top of each burger. Add 1 large can of tomato sauce to the pan and let heat thru til cheese melts. The tomato sauce will pick up all those meat juices still in the pan and coat the burgers. Serve with french fries, or whatever veggies you want.

Hi, love the pic...If you pick up any cuts of beef, marinate in steak sauce in a cold fridge, then melt butter in a pan, and add sea salt and balsamic vinegar to the pan, add meat, and sear. Tender as heck.

Or grab a box of Zataran's jambalaya mix (spelling) and ...oh, darn, fibro-brain...steak sauce or...uh...anyway, make the Zatarain's (it has beans, so kinda health-esque), add the, um sauce and the meat, let steam quietly in the pan, presto.

thanks you guys that helps.. i go blank on cooking things...i only eat chicken and turkey he only eatss beef and fish and fish i can be near so it is beef lol... love the ideas i will give them all a try.. i never think of spagetti lol...(dont eat alot of carbs lol) sighs i miss hubby cooking lol.. calgon take me to NC lol where i was spoiled lol Laughing

Does Calgon go to NC? Wink I'm not much of a cook but I gotta say, when it's hot and I feel ragged, I always turn to Hamburger Helper. I know, I know, processed food...but dang some of them are really good. and it is so easy to make and clean up after.
