Diabetes is not a carbohydrate disease. It is a disease where we are unable to fully utilize the glucose our body uses for energy. Watching your carbohydrate intake can help prevent blood glucose spikes, and many standard regimens (like Joslin) cap initial carbohydrate intake to about 45% of calories until your blood glucose gets under control.

"Counting your carbs" is central to controlling your diabetes no matter what type of diet you're on. But carbohydrates are still nutrients, not toxins.

My fear is that we get so caught up with carbohydrates, we forget the other important aspects about nutrition. We like to separate out the

world into "good" vs. "bad", but we need to remember that most things in life are about balance
