Hi Ive come to the conclusion my daughter has celiac disease. Her Rheumotologist called this morning and said her C4 count was only 12.4, she has raynauds phenomenon, irritable bowel, diarrhea, irritability and fatigue.

What I need to know now is what to feed her. I know the list of foods she should not eat is endless. I am new to Illinois I moved over from the UK 6 months ago and I am still getting used to the food shopping.

Which supermarkets have a tasty range of Gluten Free foods??? how do I persuade her to give up everything she loves to eat after she was a picky eater for so long?????

any help, suggestions or comments will be greatly received! thank you

here are some things she can eat. I have both Celiac and can't eat dairy. feel free to PM me anytime. Make sure to ask what kind of oil they fry the french fries in if you take her to a fast food resturant.

She can have Tinkyada pasta

you can make her cake and cookies using Pamela's or Bob's red mill gluten free flour. Do you have a whole foods near you? If so they have lots of Gluten free items including already made cookies and pizza dough.

I just started diet a week ago and bought The Essential Gluten Free Grocery Guide online. It has been a money and lifesaver in the stores. Lots and lots of name brand stuff.

you can also go to any health food store and they will help you find things, but also be aware that monosodium glutenate, MSG can also make you have reactions. I was also told that my son could not have the shakes at Hardees and the Frostys at Wendys. and if you can find a dietician and they can give you all kinds of good ideas for foods. I also make my son peanut butter cookies that are gluten free with 2 cups peanut butter and 1 cup sugar mix together and then throw in the oven til golden. He loves them.

I hope yo sent the post about mosodium glutamate out to as many people as possible - I did not know about this and have been saying for ages I don't think everything that says it is gluten free really is - producers are quick to cover up things like this if there is a loop in the law that says they have to declare it. I now believe if there aren't any allergy warnings it's possible then that there is mg.

Thanks for that tip I shall watch out for it in future.

I read an article on MSG that companies that produce it will not say it is GF because of cross contamination. I was already choosing MSG free before the GF diet so now I'll have to watch a little closer.

I don't know if this store is in other states but I have found Better Health Food Store to carry a large GF selection and their flour and baking prices are better then meijer and Kroger.

Hi

Thanks for the tip, hope you like the bread you can alter the recipe - experiment with i/s water and milk or just 1 egg etc and add Amaranth Gum to get a firmer texture. But it is a really tasty loaf, the first time I ate it I hadn't had bread for ages and that fresh smell then bite was sublime.
