Hello,

Im sorry for the misunderstanding. I meant to say no Kraft Macaronni and cheese. I hope you are doing well. Headaches are terrible. I have one now, followed with nausea. It can take a while to see a difference. Some people like me dont always see a difference. You really need to see a gastroentologist. A diagnosis might help take some of the stress off of you. I eat alot of rice. Be careful because some of the flavored rice packets contain gluten. I use plain white insant rice and do a little stir fry without the stir fry sauce. I flavor it with onions,garlic,salt,pepper. Beans are also good for you. You can throw them in almost any dish. I will put up some GF reicpes. I hope you feel better.

Hello, Here is a GF recipe for Chicken Nuggets....

Ingeredients:

1 large egg

1/4 cup rice milk

1/2 cup brown rice flour

1/4 cup tapioca flour

1 tspn. salt

1 tspn. pepper

Spices (mix in with ingredients above)

1 pinch thyme

1 pinch oregano

1 pinch rosemary

3 pinch sweet basil

3 pinch parsley

1 baked garlic

1 tspn. GFCF baking powder-put in last

Directions:

Mix the above ingredients together in a bowl and soak chicken pieces in this mixture.

In a separate bowl crush 1/4 cup lay brand original regular potato chips (as fine as possible) or brown rice bread crumbs. Dip chicken in potato chips or brown rice bread crumbs. Deep fry for 5 minutes.

I hope everyone who tries this one enjoys it.

So... What if it is my birthday or a special occasion or something and I want a piece of real cake. Is that terrible? If I eat gluten purposefully a few times a year... I know I may not feel well afterwards, but just wondering how bad that would be.

Hi Kelly, It is very critical that you stick to a gluten free diet if you have been diagnosed as Celiac. It can take up to a year or more in some cases for the villi in your intestines to heal and begin to absord nutrients from food. If you keep cheating it takes longer and can be dangerouse in the long run. Un treated Celiac Disease can lead to cancer. I would not be writting this if it were not true. I know alot of opinions will show up on this but i do my homewrork. There are a lot of gluten free baking products out there now. You could bake a cake using all purpose gluten free flour. There are GF cake mixes too. Just google for GF products. I have had the same thought too. I dont blame you at all but i do want you to be alright. Happy Birthday and good luck!
