I am fed up with a lot of things going on with me medically-near-constant migraines, upset stomachs, depression, social anxiety, and more that I'm sure is too much to mention here.

I've decided that since doctors can't figure out why any of this is happening, I'm going to give GF a try. I have a few questions, though:

1. What words do I want to look out for in ingredients (obviously barley and wheat, but are there others?)

2. How long did it take before you started seeing a difference in your health?

3. If you had been diagnosed with things previously (i.e. migraines, ibs, etc.) were you able to get off your prescriptions? I would be so happy if I could stop taking all this medicine!!!

4. All I eat now is bread and pasta. How did you cope withat change?

I would really appreciate any help, suggestions, advice that anyone is willing to give. Again, I am just trying this out. I am a graduate student and I live on campus and eat most of my meals in a dining hall... so things can be very tricky!

This is Day 1. I hope this is the answer I've been looking for!

Hi There!

You are smart to try a gluten free diet. Many people have had great outcomes from doing same.

Don't worry so much about the foods you can eat. The gluten free diet has come a LONG way.

My children both have Celiac Disease. (ages 7 & 10)

For breakfast, Fruitty pebbles or Cocoa pebbles are some of their favorites. I realize you are at college, but if you have a small toaster, most gluten free bread is delicious (only of you toast it thought!!) We use "kinnickinnick tapioca cheese bread". I give the kids peanut butter & jelly, or what ever kind of sandwich you like. Most Boars Head cold cuts are gluten free.

For dinner- you can get a hamburger (no bun), steak, grilled chicken, hotdog (most are Gluten free, but NOT nathans).

Most Frito Lay chips are gluten free also-including Frito's. (However, Nacho Cheese dorito's are NOT gluten free)

Most chocolate is gluten free too!! (YAY)

As far as pasto goes, there is a brand called Schaar Pasta which I like the best. WE cannot tell the difference between GF and regular!!! Also Tinkyada brand is good too. You may have to go online for those.

Thank you so much!!! I was happy to find that Frito Lay products are Gluten free, and I honestly haven't had a hard time the past day finding things to eat that were already in my apartment--Tuna, Real Mayo, Cheetos, Coke, Water , Tamales, Pineapple chunks (no salt added), rice, Kraft singles... Didn't even lick a stamp for a letter I sent today!

Going strong... have a migraine, but going strong!

My question is, if I accidently have a little, is my whole experiment off?

I'm just afraid I'll mess up or eat something that's cross contaminated.

You are so welcome~ I also get migraines....I have been tested for Celiac Diseae, however, The Dr. says I do not have it. I think I will also go gluten free just to see if headaches go away...

As far as you question of accidently getting cross contaminated, I don't think the whole experiment is off, you may feel a little different. One of my children is extremely sensative..(litterally w/in 4 hours, he'll start to vomit horribly), but my other child never had ANY symptoms. The only think we found with her was that once she went on a gluten free diet, she told me her "head did not feel so "foggy" anymore". Her grades went from 40-60's to 90's!!!! She's able to focus much better. Most of all she feels good. So don't be so hard on yourself. It's impossible to completely rid all gluten (unless you live in a bubble!) I'm sure in restaraunts, when I ask the cook to make sure he wipes the grill before preparing my children's food, I'm sure they get a tiny bit of cross-contamination. So just be really careful, but don't make yourself too crazy with accidents.... I hope you feel better soon. Keep me posted!

Do your kids eat in the cafeteria at school? I work on a college campus as a Graduate Assistant and part of my stipend is a 5-a-week meal plan. This is not only where I eat most of the time, but also where I get to socialize with colleagues. I know I can bring my own foods and they have a decent salad bar, but just wondering about other options. Hamburger without a bun is good. They also have tofu, seafood and chicken stir fry... in addition to sizziling chicken ceasar salad. Wow. I never thought about all these options. But, I don't know about teriyaki sauce or the dressing. I think I'm just typing *out loud* now

NO, they don't eat in Cafe yet, but we eat out at least once a week. When we eat out, I just explain that they are "allergic" to bread. Everyone seems to understand that word and take you seriously. Maybe you can meet with the cafeteria management and ask about options. Most frozen french fries are gluten free, however,if they cook them in same oil as (breaded) chicken fingers, that would be a huge problem. Believe it or not...McDonalds has a separate fryer used only for the fries. Therefore, we at at McDonalds all the time. My daughter gets "Big mac- no bun, fries and a coke!". At the school, we have a microwave for my children. I make gluten free pizza (I get this at the supermarket-"AMY's Rice Crust pizza" It's incredible. I put pepporoni on it, send it in with the kids, and they microwave it for approx 20 seconds.

If you don't want to bring lunch, hopefully the cafe mgmt will work with you to have gluten free foods for you. Ceasar salad is a geat option (no cruitons). Just be careful with teriyaki sauce, read the ingredients, some do contain wheat. La Choy soy sauce is SAFE. Also beware of any ingredients which have "MALT" that is another derivative of wheat.

Most salad dressing is safe. I have not come across any which are not (yet) Sometimes, My kids will roll cold cuts in lettuce to make a "wrap"

AND if you like fruit- you can't go wrong there! Good luck to you.

Im am glad you are trying a GF diet. You absolutely cannot have Wheat,oats,barley,rye,malt. You will need to ask the cooks at your cafeteria how they prepare the food. Try potatos. Anything potatos! The GF diet is extremely limited. You cannot have most sauces. Stick to meat,veggies, and fruit. You are sure to be GF just eating those. I have a pretty harsh case. Migraines, nausea come with the territory. Im GF but so far no conditions have improved yet. Its been almost two years. Dont let that dishearten you. Everyone responds different. No fried foods for you at all. Eat lots of nuts, unless you are allergic. You need to have a biopsy of your small intestine to have the truest diagnosis for celiac disease. Blood tests can have a false negative, especially if you are GF and get one. If you have any questions feel free to email me anytime. Good Luck.

You cannot even have a little! Kraft is not GF. I know it is a very hard diet. You have to be very strict. Most junk food is GF. Remember... meat, veggies,fuit. I read your list. Not good my friend...You can do it. Good luck.

I got this from someone else's post--that's why I thought it was GF. Before I eat anything, I type in "Brand Food Gluten Free" If something comes up about it being GF, I eat it. If not, I put it in a bag and give to a friend! I have not yet been to the grocery store... but am disheartened by the fact that I haven't been doing well so far!

I really am doing a lot of research and trying my hardest. I will eat nothing but squash if it means I will not have another headache and the other things will go away as well!

I have no known food allergies and, but I do not like cashews, pecans, etc. Only peanuts. Any help??? I feel lost. What else on my list is off?

Hi! I believe Kraft singles are gluten free. The only way to know for sure is to call kraft direct.

Rice and potatoes are safe for sure. My 10 year old daughtere brings a single serve package of rice, chicken,carrots, peas, in a delicious chicken sauce. I'm not home right now, but I'll get you the name brand.

I'll give you an example of what my daughter eats each day to give you ideas:

Breakfast: Fruity or cocoa pebbles. OR Cream of Rice

found in the breakfast aisle.

Lunch: Rice and chicken (I'll get you the name brand later)

Dinner: Steak, Hamburger, chicken, GF pasta, Hot dog,

Frozen french fries(read label) baked potatoe, white rice w/butter,Salad

Desert: Edy's ice cream, potatoe chips, frito's

I hope this give you ideas,
