No foodies? Believe me I am as much a foodie as you can get thgese days without having a show on the Food Network!

I just polished off a ham sub and chicken wings so today I didn't fare much better than you. In general though we have been doing really good. My husband is VERY overweight and was just declared to be a diabetic with high blood pressure so our eating habits have changed drastically (except tonight, tonight we were very bad).

Just about everything is made fresh, very little processed anything because processed almost always means sodium and sugar. We're following a 'plate map' from his nutritionist where you eat from an 8 to 9 inch plate. Then you imagine it in half. One half is lean protein. The other half is split between a low glycemic (no idea how to spell that) index carb/starch and a fruit or vegetable (that is not a starch so not a white potato or corn).

The nutritionist recommended and I have gotten into using Wonder Smart White Bread (because my husband won't do salads or whole wheat bread), Thomas' Bagel Thins and Ronzoni Smart Taste Pasta (because my husband is a carb junky so I have been doing tiny half sides of pasta so he doesn't feel punished, it's good stuff). Those three products are just about the only processed food we eat now.

My favorite dinner to serve now is boneless skinless chicken breast seasoned with garlic and basil and oregano and topped with low fat mozzarella cheese melted under the broiler with a drizzle of sauce, a small side of Ronzoni Smart Taste spaghetti with my homemade tomatoe sauce and a side of broccoli with a squeeze of lemon with a salad. Very filling and very healthy.

My homemade sauce is a mixed bag. It is healthier than jarred because it has no added salt or sugar but it has real butter. I'm not sure whether the butter makes it all bad though. I use unsalted and some fat is allowed in the diet and I cook with virtually none except my sauce so I declare it ok.

Anyway the sauce is incredibly delicious. I didn't invent the recipe so I can say that and not be being immodest. It is so simple that I didn't believe it could be much of anything when I read it and then it turned out to be my favorite thing of all time to cook. It has just three ingredients. One 28 oz can of crushed tomatoes, five tablespoons of butter and one large peeled onion cut into four big hunks. Put all the ingredients in a small sauce pan and cover with a lid. Bring to a boil and then lower to a simmer. Simmer, covered, for forty-five minutes, stirring a bit here and there. In certain circles this is known as The Sauce. You can season it but try it first without it because it doesn't need anything at all, really.

Mexican salad, corn on the cob, steak tips, spanish rice and a spoonful of potato salad. It's yummy if I do say so myself. (I cooked)

Sarahtroy you don't have to live in the basement. We have a guest room that's only inhabited during the every-three-months visit from the mother-in-law-from-hell. You come stay in the guest room and she can have the basement.

Since hubby is a carb junky one strategy I have been tricking him with is one cup of the Ronzoni Smart Taste Penne tossed with The Sauce and lot's of zuccini, mushrooms, broccoli, lean ground turkey seasoned with oregano and garlic and pieces of the onion from The Sauce. I have really good nonstick pans and I don't mind a little elbow grease so I just sprinkle a little water to cook the veggies rather than using any kind of oil.

Sigh. I miss cooking with oil. I miss frying. I miss when my chicken parmesan was thick pieces of breaded and fried chicken under layers and layers of gooey regular mozzarella and generous shakes of parm with sides of spaghetti the size of row bvoats. Sigh. I miss cooking like that but I'd miss my big galoot even more so it's low fat, low carb and learning how to cook all over again.

Soy you haven't mentioned what you cook. Surely you don't eat at Dominoe's every day?

True, Smile thankfully my domino's habit is slowly fading from a once a week thing to hopefully once a month or less. I actually went to culinary school years ago! Smile Was a private chef in cali, then got into bakery. My favorite dishes come from the mediterranean: mousakka, stuffed grape leaves, koushari, an egyptian dish of lentils,rice,and pasta with a spicy garlic tomato sauce and topped with fried onions. Yum but watch out for those carbs! However, I'm hoping to transition into some serious healthy cookery. It'll happen, just still doing research. They don't focus on health in culinary school, but I had a blast even though career wise, maajor mistake. :| Ah well...It was an experience.
