For Cerviche you can do what hubby and I do. We pre-cook the shrimp lightly and then let it finish cooking in the lime juice. It comes out really good. I have had cerviche where the shrimp hasn't cooked all the way and hated it, so we came up with the idea to pre-cook the shrimp and it works great. You can buy dried tortillas at any store today and eat it like that . It is really good.

No I am not Mexican and have swallowing issues. Hubby made grilled chicken, yellow rice and fresh corn tortillas( he is from Honduras). If the weather was cooler I would have made sopa de jiaba( crab soup). Cheryl v.
